The Head Chef of AleGloria is Bartek. He is the one who gives our menu its distinctive character, combining Polish classics with the European school of cooking and a contemporary lightness. He reaches for time-honoured recipes, yet interprets them in his own way — focusing on depth of flavor, purity of aroma, and refined attention to detail. In our kitchen, everything begins with craftsmanship: long-simmered stocks, sauces built layer by layer, and a thoughtful approach to temperature and time.
We cook with seasonal, carefully selected ingredients. We choose products at their peak, which is why our menu naturally evolves with the seasons.
